Coming from a family of winemakers with a centuries-old tradition in Burgundy, Francois Carillon created his own winery in 2010, leaving the family business and splitting the vineyards with his brother. Today, Domaine Francois Carillon owns about 16 hectares of vineyards in Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin, and his wines are highly praised by critics and the public. The company logo refers to the year 1611, a date found engraved on a stone in one of the cellars of the estate. Aligoté grapes are selected and hand-picked from over fifty-year-old vineyards located in Puligny-Montrachet and Coupeau on clay-limestone soils. Fermentation and maturation take place in barrels (10% new), and the finished wine rests for a year before bottling. Francois Carillon's Bourgogne Aligoté is a wine with an intense and brilliant color and golden yellow tones. Its aromatic profile is fragrant and elegant, with citrus notes of grapefruit and juicy tropical fruit. On the palate, it is fresh and invigorating with a good structure and a well-balanced acidity. It is a surprisingly classy Aligoté that makes an excellent aperitif on its own, but also pairs deliciously with shellfish, snails, and vegetarian quiches.
