Clau de Nell is a biodynamic winery located in the Loire Valley and acquired by Anne-Claude Leflaive and her husband Christian Jacques in 2008. Since then, the estate has been renovated, the vineyards have been expanded and Sylvain Potain has taken over the management. The company concentrates its production on local grape varieties, operations in the vineyard and in the cellar follow the indications and rhythms of the biodynamic calendar and minimal interventions. The Chenin Blanc grapes, grown biodynamically, are gently pressed in whole bunches. The winemaking takes place with natural yeasts according to the biodynamic calendar and the finished wine is then aged in used Burgundy barrels for about a year and for another 6 months in vats, always in the cellars dug into the tuff. The wine reveals a brilliant color with golden tones. The nose is intense, elegant, and fresh with captivating aromas of ripe stone fruit and banana, cooked apple and Mediterranean herbs, and some hints of pastry. On the palate, it is soft, velvety, and fruity with a long and slightly citrus finish. It is a wine with a sensual character that pairs well with seafood, scallop carpaccio, or white asparagus served with hollandaise sauce.
